3 eggs
1 cup sugar
1-3/4 cups organic all-purpose flour
2-1/2 tsp baking powder
1/3 cup butter, softened. (can substitute with cannabis-infused butter)
1/3 cup butter milk. (can substitute with plain Greek yogurt)
1 large organic orange, washed and cut into pieces (with the rind, but remove seeds)

Juice of one organic orange
1/4 cup sugar

Preheat oven to 350 degrees F. Prepare pan with cupcake liners or butter pan.

Place the sugar and eggs in a large bowl and beat with a mixer until light and fluffy.

Sift the flour with the baking powder in another bowl, then add to mixture of sugar and eggs a little at a time while adding the softened butter. Continue to mix with beater until completely blended, then stir in buttermilk, or yogurt.

In a food processor, process the whole orange until it is almost pureed. Add this orange to the cupcake mixture and stir until evenly combined, then put the batter into the individual prepared cupcake liners. (Fill 3/4 full).

Bake for 20-25 minutes, test with toothpick to make sure cupcakes are done. Remove from oven and let cool 10 minutes and then glaze. (Makes about 15 cupcakes).

Make orange glaze:
In a small pan, prepare glaze by melting the sugar in the orange juice and allow to simmer for a few minutes, till the liquid has a syrupy consistency. Brush over top of cupcakes and allow to cool completely.
